Recipes : Low - Fat Food - Chicken Summer Rolls

Ingredients :
500g chicken mince; 1 medium carrot(120g);
2 green onions; 1 medium red capsicum(200g);
2 teaspoons peanut oil; 2 tablespoons palm sugar;
2 raffia lime leaves,shredded;1 tablespoon lime juice;
1 teaspoon fish sauce; 1 tablespoon sweet chili sauce;
2 tablespoons chicken stock; 30 rice paper sheets;
fresh mint leaves; fresh coriander leaves;

Dipping Sauce

1 Lebanese cucumber(130g), chopped finely
2 tablespoons sweet chili sauce
1/2 cup(125ml) cider vinegar
2 teaspoons sugar


Method :
a) First, cut carrot and onions into very thin, 8cm-long strips. Halve capsicum; remove and discard seeds and membranes. Slice capsicum into very thin 8cm-long strips.

b) Heat oil in medium frying pan; cook chicken, stirring, until browned all over. Add sugar, lime leaves, juice, sauces and stock; cook, stirring, until sugar is dissolved, cool.

c) Place one sheet of rice paper in medium bowl of warm water until just softened; lift from water carefully, place on board.

d) Place one mint leaf and coriander leaf in center of rice paper; top with 1 level tablespoon cooled mince mixture and a few strips of carrot, onion and capsicum. Roll to enclose, folding in ends (rolls should be about 8cm long).

e) Repeat with remaining rice paper sheets, mint, coriander and filling. Serve with dipping sauce.

f) Dipping sauce - Combine all ingredients in a small bowl.
